Portions: 8     Serving size: 1-1/4 cup


  • 12 ounces frozen pre-cooked small shrimp
  • 10 ounces cooked chicken breasts
  • 1/2 cup green pepper
  • 1 tablespoon olive oil
  • 2 cups white rice, uncooked
  • 4 cups low-sodium chicken stock
  • 1 cup salsa
  • 1 teaspoon turmeric


  1. Thaw the shrimp. Cut chicken breast into bite-sized cubes. Chop the green pepper.
  2. Heat olive oil in a 12-inch skillet over medium heat. Add rice and cook for 30 seconds, stirring constantly.
  3. Stir in the stock, salsa, green pepper and turmeric and heat to a boil. Reduce the heat to low. Cover the skillet and cook for 15 minutes.
  4. Stir in the shrimp and chicken. Cover skillet and cook for 5 minutes or until the rice is tender and most of the liquid is absorbed.

My mom actually loved this recipe! She is usually unenthusiastic about food. We changed a few things: added onion, and garlic along with the bell peppers, sauteed them until soft and add rice. After everything was boiling added a pinch of saffron and some chili flakes.

I love the recipe but is it ok if we add some shell fish like crabs to enhance more the flavor? Dietitian comment: You could add 1/2 cup crab. It will boost potassium and sodium by approximately 30 mg and phosphorus by 23 mg per serving.The other option is to replace the shrimp with an equal amount of crab meat.

I prefer yellow rice (Spanish or Saffron types). I know they are higher in sodium, but are those substitutions otherwise ok? Dietitian comment: Yes as long as there are no high sodium additives in the rice.

Looks to be too high in phosphorous & potassium. I personally avoid all foods with those numbers. Dietitian comment: The 1-1/4 cup portion and 28 grams of protein makes this dish a main entree and the amounts of potassium and phosphorus work easily into a kidney diet. You could adjust the serving to a smaller amount if desired.
