Pasta with Cauliflower

Pasta with Cauliflower is a healthy, easy and kidney-friendly recipe to serve at your next gathering.

Portions: 8     Serving size: 1 cup pasta with 1/2 cup cauliflower sauce

Ingredients

  • 1 medium head cauliflower
  • 2 tablespoons olive oil
  • 1 medium onion
  • 3 garlic cloves
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon crushed red pepper
  • 14 ounces low-sodium chicken broth
  • 16 ounces linguine, uncooked
  • 8 tablespoons grated Parmesan cheese

Preparation

  1. Wash cauliflower and cut into bite-sized pieces. Finely chop onion and mince garlic.
  2. Heat olive oil in a large pot over medium heat. Add onion and garlic and sauté for about 5 minutes until onion is transparent.
  3. Add cauliflower, black and red pepper and sauté for 5 minutes.
  4. Add chicken broth and bring to a boil. Reduce heat to simmer and allow cauliflower to cook until tender.
  5. Cook linguine according to package directions, omitting salt. Drain and return to the pot used to cook it. Add several spoonfuls of the broth from cauliflower mixture to linguine and toss to prevent sticking.
  6. Divide linguine into 8 individual servings and top with cauliflower and broth.
  7. Add 1 tablespoon grated Parmesan cheese and more black and red pepper to taste.

Helpful hints

  • Limit Parmesan cheese to 1 tablespoon per portion to keep phosphorus low.

I am on this site for my husband. I will be the one preparing the meals and this sounds easy and I have most of the ingredients anyhow. Also he can have more than 1/2 cup serving. He is in the hospital for Stage 4 CKD. The food he can have will be hard to get used to but he has had some meals already that he says are tasty and this sounds just like the one meal that is his favorite. I am going to try it. This site is a little hard to navigate, but I have found alot of helpful information on it about CKD and what you can eat with each stage. I am looking for more recipes where you can have more than 1/2 cup for a serving. I will rate it after he tries it ! Right now it sounds really good and it will be easy to make

This recipe is in your Kidney friendly recipes. I would like to put it into the database for the Diet Helper but the database says: ' 313 ' is not a valid value for Calories. ' 354' is not a valid value for Potassium. The recipe is good, your website is difficult to use in many respects.
