Ravioli and Zucchini

Pasta dishes are a great way to add variety to your diet in place of a typical meat-based meal. DaVita dietitian Sandra’s kidney-friendly recipe for Ravioli and Zucchini can be prepared from scratch in 20 minutes or less—the trick to this dish is not to overcook the ravioli—it should retain that al dente quality that the Italians enjoy. The literal translation of al dente is “with teeth”—sink yours into this delicious recipe.

Portions: 4     Serving size: 1 cup

Ingredients

  • 9 ounces frozen beef ravioli
  • 2 cups zucchini
  • 3 green onions
  • 1 medium red bell pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried basil leaves
  • 1/8 teaspoon black pepper
  • 1/4 cup reduced-sodium chicken broth

Preparation

  1. Julienne cut zuchinni and slice green onions. Coarsely chop bell pepper.
  2. Cook ravioli as directed on the package.
  3. Spray a large, nonstick skillet with cooking spray, and heat over medium-high heat.
  4. Add zucchini, green onions, bell pepper, garlic powder, basil and black pepper. Cook for 3 to 5 minutes until veggies are crisp-tender.
  5. Drain ravioli, add broth, and stir into the vegetable mixture.
  6. Cover skillet and cook over medium-low heat for another 5 minutes, or until thoroughly heated. Stir occasionally, being careful not to break the ravioli.

    • If vegetables are prepared earlier, this is a quick and easy meal that anyone can put together.
    • Goes well with tossed salad and French bread.
    • Try other types of ravioli--frozen or fresh, beef or chicken.

Looks delish but can I use cheese ravs, I have a whole bag in my freezer. I am a diabetic and know how to use them but now have CKD so this is a issue. Thanks all. Dietitian comment: The cheese ravioli is higher in phosphorus, calcium and sodium compared to meat ravioli. If you compensate by reducing sodium and phosphorus in other meal items, or by reducing the number of ravioli you may be able to make the change. Check with your dietitian to be sure.

I love this recipe....sometimes I make it with green beans instead of zucchini. I have also used pork broth instead of chicken broth.

I prepare this for my mother 9 lives. She said it was great. She did want a lil' more taste (being a country gal) lol... I Just added some Mrs Dash and it was really tasty.
