Renal-safe Macaroni and Cheese

Renal-safe Macaroni and Cheese is the kidney-friendly way to get your mac and cheese fix.

Portions: 4     Serving size: 1/2 cup


  • 2 cups elbow pasta
  • 1 jar Kraft® Pimento Cheese spread made with cream cheese, 5-ounces
  • 4 ounces canned Ortega® diced green chilies
  • 1/4 teaspoon black pepper


  1. Rinse and drain green chilies.
  2. Cook noodles in boiling water without salt or butter until the noodles are al dente.
  3. Drain noodles. While noodles are hot, add the pimento cheese spread and chilies.
  4. Stir until the cheese spread is melted into the noodles. 
  5. Serve hot. Add pepper at the table for taste, if desired.

Helpful hints

    • Elbow, shell or bowtie pasta are great choices for this recipe.
    • For a higher protein variation, add browned and drained ground beef.
    • Most cheese spreads are very high in sodium and phosphorus. The pimento spread in this recipe is made with cream cheese instead of processed cheese. (Look for the Philadelphia® brand cream cheese logo on the label). This is what keeps the sodium and phosphorus content low enough for a renal diet.  Avoid bottled or canned spreads made with processed cheese.

can this recipe be made without the pimentos and chillies do not like either one. The Pimento cheese spread is cream cheese based[INVALID]so the pimentos are included. This product is lower in phosphorus and sodium than other cheese spreads. One reviewer used neufchatel cheese instead[INVALID]you could try it but not sure it will have the same cheesy taste.

I suggest serving this as a side dish along with a chicken or meat entree, a vegetable like fresh green beans or broccoli and a dessert plus beverage.

I made this for our patients, who were all very surprised to see mac and cheese on the menu. It was very easy. Most really liked it. No, it doesn't taste just like the boxed stuff, but it is really good. I like the idea of adding ground beef to it.

We made this last night, and although I admit I was a bit skeptical while making it, the final outcome was great, and we didn't even use the chili peppers. It tastes almost just like your traditional calcium/phosphorus filled mac and cheese. I highly recommend this for all the end stage renal failure patients like myself, that love this food!! =D
