Chicken Lettuce Wraps

One skillet is all you need to make delicious and kidney-friendly Chicken Lettuce Wraps. Heat the chicken and mix in the tasty spices and enjoy it all wrapped in a cool, crisp lettuce leaf.

Portions: 4     Serving size: 2 wraps (1/2-cup chicken mixture, 2 lettuce leaves)

Ingredients

  • 8 ounces chicken breast, cooked
  • 2 scallions
  • 2 teaspoons garlic
  • 2 tablespoons canola oil
  • 1 tablespoon sesame oil
  • 2 tablespoons unseasoned rice vinegar
  • 2 teaspoons hoisin sauce
  • 1 teaspoon Chinese Five Spices seasoning
  • 1/4 cup red onion
  • 1/4 cup fresh cilantro
  • 1/4 cup mushroom
  • 8 lettuce leaves 

Preparation

    1. Mince chicken breast and garlic. Chop scallions, onion, cilantro and mushrooms.
    2. In a medium skillet combine chicken, scallions, garlic, canola oil, sesame oil, rice vinegar, hoisin sauce and Chinese Five Spices seasoning. Cook over medium-low heat for 15 minutes, stirring several times.
    3. Remove chicken to a serving bowl. Place 1/4-cup chicken on each lettuce leaf. Top with 1-2 teaspoon each red onion, mushroom, red bell pepper and cilantro or parsley. Wrap lettuce around chicken mixture and pick up to eat.

Helpful hints

  • Hoisin sauce is usually found in the Chinese or Asian food section of most grocery stores. One brand, Sun Luck® hoisin sauce, can be found by visiting their website at  www.sunluckfoods.com.
  • Chinese five spices is a combination of ground cinnamon, star anise, fennel, ginger, cloves, white pepper and licorice. Dynasty brand Chinese Five Spices® is found in the spice section of most grocery stores. Very tasty - however the servings are more "appetizer" sized. If you have room in your sodium count for the day I would double the recipe. I didn't have any trouble finding the 5 Spice or the Hoisin sauce at our local grocery store. My daughter said that these wraps taste as good as the one's you get at Pei Wei. :)
