Made this for a 'Summer Salad' tasting day at our unit. We used the mini bowtie pasta, which made it look nice. Good recipe.

This recipe was a hit with the patients. Very easy to prepare, looks pretty to serve.
Prepared for a pre-Thanksgiving celebration, and the patients loved it. Made in 13x9" pans-1-1/2x recipe. Cut into squares, served in small muffins papers.
I prepared this for a pre-Thanksgiving patient party and it got mixed reviews. Most are used to something sweeter. Plus, I couldn't find unsweetened cider, so used unsweetened apple juice.

We made this for a protein days tasting in the unit and served it in little medicine cups. Easy-could put in crock pot and let cook all day. Patients liked it.
