This sounds really good. I make something very similar to this. I slice the cucumber after peeling long way, and scrape out those pesky seeds. Then I slice it as thin as humanly possible. Then I squeeze the slices in a clean dish towel getting as much liquid out of them as I can. I omit the salt, in my humble opinion, it isn't needed, and add 1/4 tsp. of garlic powder instead. I also omit the mayo and use sour cream in it's place. Gives the whole dish a bit of zip. I've never used food coloring, but will the next time I make this. A pale green color sounds attractive!
This is truly delicious! Even I who do not love sweets enjoyed it. BUT...and it's a tiny one. Portion: 2" x 2". Please it just isn't worth the work for that small a piece! I believe strongly in portion control, but one needs to be sensible and a 2 x 2 inch piece just isn't sensible.
