I think this sounds wonderful...what if you used it as a stuffing for button mushrooms? Say, a serving of 3 mushrooms, with about a tablespoon of dip in each one, Baked in the oven till bubbly, with a little breadcrumbs and a pinch of Parmesan Cheese and minced chives on top? Would that still be kidney friendly?Dietitian comment: These changes will boost the potassium and phosphorus content but if you reduce the portion to 2 crab-stuffed mushrooms it is still kidney-friendly.

This is a great dish for a party or just for a special dinner. It is rich tasting,even when using lower fat cream cheese. I served it with grilled slices of sourdough bread. It was a hit!
