Cabbage Rolls made with Turkey

Portions: 6     Serving size: 2 cabbage rolls

Ingredients

  • 12 cabbage leaves
  • 1 pound ground turkey
  • 1/2 cup uncooked rice
  • 1/4 cup onion, finely chopped
  • 2 eggs
  • 1/2 teaspoon black pepper (divided use)
  • 1/4 teaspoon dried basil
  • 2 teaspoons dried parsley
  • 1-1/4 cup water (divided use)
  • 3 ounces tomato paste
  • 2 tablespoons lemon juice
  • 1 tablespoon sugar 

Preparation

  1. Carefully remove 12 cabbage leaves from a whole cabbage and wash them.
  2. Boil a large pot of water. Add cabbage leaves and cook for 2 minutes to soften. Drain and set leaves aside.
  3. In a large bowl, combine ground turkey, rice, onion, eggs, 1/4 teaspoon pepper, basil, parsley and 1/4 cup water.
  4. Place 1/4 cup of the turkey mixture on the cabbage leaf and fold sides of leaf over turkey mixture.
  5. Place rolls close together, seam side down in a baking dish.
  6. Combine tomato paste, lemon juice, 1 cup water, 1/4 teaspoon pepper and sugar to make a sauce. Top cabbage rolls with sauce. Cover and bake at 375° F for 1-1/2 hour. Uncover and bake 30 minutes longer.

Helpful hints

  • Cabbage rolls can be cooked in a slow cooker on low setting for 6 to 8 hours instead of baked in the oven.
  • If you are following a low-potassium diet, be aware 2 cabbage rolls are equal to 2 vegetable servings. Consuming extra servings of fruits or vegetables can cause high potassium levels.

Used ground beef & cooked rice cause that's what I had. Half browned, then drained, beef first since it had 20% fat. My husband rated it 6 (of 5) stars!

We are having a family dinner and decided to make this. Only thing is what would you recommend for side dish as well? Dietitian comment: I think a nice sourdough roll or a piece of crusty french bread would compliment this dish. A low potassium dessert could also be included-[INVALID]s, pie or cake or you could go with a low potassium fruit such as fresh berries.

I used very lean hamburger for this recipe, because I didn't have any turkey, used 1 small can tomato sauce(low sodium) instead of tomato paste, added a little garlic powder and a teaspoon of Mrs.Dash,used only one egg,and cooked it in a slow cooker for around 4 and a half hours on high setting.They were "Excellent", we loved them and will make them again, since this made twelve, we had 2 apiece this evening and I froze the rest, so we will have two more meals already made, Wonderful!!

I haven't tried this yet..but I do plan on it..I am new and just seeing this for the 1st time..I am curious to know if the sugar that this recipe requires makes this taste sweet at all? Can it be ommited without ruining the taste? I can't post without rating so I will give it 5 starts because it sounds so good. Moderator comment, You can omit the sugar without making a big change in the taste. It will still be tasty!

I made the cabbage rolls and instead of tomato paste I used canned red peppers. It cuts down on the potassium

really, really good. I used left-over cooked rice and low sodium tomato paste. Also, I, too, used the slow cooker..on low for 4 hours. Served it with boiled new potatoes (the tiny ones) We didn't have a dessert because by that time, dinner, I had used up my limit of P and K.

This was excellent - I used the "crock pot" to do my cooking, and "low sodium" tomatoe paste - my husband and I both loved them. I made " Southern-style Cornbread--Low Phosphorus" to go with it - the cabbage rolls were moist and flavorful - thank you - we will be making them again.
