Tasty Chicken Patties

DaVita renal dietitian Melanie from Ohio shares her recipe for kidney-friendly Tasty Chicken Patties, an excellent alternative to salmon or tuna patties for the person who’s following the dialysis diet but doesn’t care for fish.

Portions: 6     Serving size: 1 patty

Ingredients

  • 14.5 ounces canned chicken
  • 1 ounce  cream cheese, softened
  • 1 egg
  • 1/8 teaspoon ground sage
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • 3/4 cup panko bread crumbs
  • 3 tablespoons olive oil

Preparation

  1. Using a fork, mash chicken with juices in a medium bowl.
  2. Add the cream cheese, egg, sage, garlic powder, black pepper, onion powder, Italian seasoning and bread crumbs, and mix well.
  3. Form six patties.
  4. In a medium skillet heat olive oil over medium heat.
  5. Fry patties for 5- to 6 minutes on each side or until crispy on the outside and heated through.

Helpful hints

  • Choose the canned chicken lowest in sodium.Melanie uses Keystone Chicken (available at Walmart).
  • Chicken Patties are very similar to salmon or tuna patties, but might be better liked by someone who doesn't care for fish. 
  • Look for Kikkoman brand panko bread crumbs-- the sodium content is lower compared to commercial and generic unseasoned bread crumbs. Unsalted or low-sodium crushed saltines are an acceptable alternative to the bread crumbs.
  •  Variations: instead of patties, form into 24 chicken meatballs. Meatballs could be eaten as a high-protein snack or used with theDaVita.com Roasted Red Pepper Sauce recipe over pasta.

This is really good. I make it with toffuti cream cheese and leave out the egg, because are can not have eggs. They are moist and stay together really well for cooking.

My DR is more concerned with my potassium and protein, and has not mention phosphorus as a concern. My concern with this recipe is that the protein seems to be very high. 17grams? Im in stage 3 (ICD-585.3 ) Renal Disease. Dietitian comment: You can make smaller patties for a lower protein diet. If you make 8 instead of 6 patties protein is 13 grams each. If you make 10 patties protein is 10 grams each.

I am thinking, would this work also with just plain chicken, baked. Would I need to add some type of liquid with it? Dietitian reply: No I think the cream cheese will keep it moist.
