These are delicious! I replaced the sugar with Splenda, but I used the icing. If you use Splenda instead of sugar, make certain your butter is fairly soft. The Splenda is so light compared to sugar, that when I was trying to cream the butter and Splenda, bits of the mixture kept flying out of the bowl. The dogs liked it, but I would rather keep it in the bowl. The other thing I noticed was the the batter is very thick and had to be spread out rather than poured. I kept thinking I missed a liquid ingredient, but no. The only question I had since the batter was so thick was is the sour cream actually supposed to be soured cream (whipping cream that you add vinegar to to sour the cream) rather then the stuff you use on baked potatoes and in dip.? And if it sour cream is correct, would it be okay to use reduced fat sour cream? The sodium content is slightly higher, but there doesn't seem to be any potassium in the reduced fat (at least none is listed in the ingredients). The recipe turned out wonderful. Moist and very flavorful, but not overly sweet. I would definitely make them again! Yum! Dietitian comment: You were right--use regular sour cream. Yes the low fat version is an acceptable substitute.

Fantastic! I have been making this recipe for over a year, about every other month for my mother-in-law & husband, she's on dialysis, he's not, and they love it.
