Mandarin Chicken Salad

- 1-1/2 pounds boneless, skinless chicken breast, uncooked
- 1/4 cup green onions
- 1/2 cup celery
- 1/2 cup mandarin oranges
- 1/2 cup low-fat mayonnaise
Preheat oven to 350° F.
Arrange chicken in a baking pan and bake until done, approximately 45 minutes. Remove cooked chicken from oven and let cool.
Chop chicken into fine pieces and place in a large bowl. Finely chop green onions and celery. Drain mandarin oranges.
Add green onions, celery and mayonnaise to chicken. Mix well. Chill until ready to serve.
Before serving, cut mandarin orange section in thirds and fold into the chicken salad.
