Citrus Salmon

Everyone knows that salmon is one food that’s really good for you. Now DaVita renal dietitian Jennifer from Wisconsin offers up her take on grilled salmon with a fresh lemon dressing spiced with cayenne, Dijon mustard, garlic and capers, plus a touch of basil and dill. Citrus Salmon is an easy-fix entrée that’s tasty and kidney-friendly to boot!

Portions: 6     Serving size: 3 ounces

Ingredients

  • 1-1/2 tablespoons lemon juice
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 1 tablespoon Dijon mustard
  • 2 garlic cloves
  • 2 dashes cayenne pepper
  • 1 teaspoon dried basil
  • 1 teaspoon dried dill
  • 1 tablespoon capers
  • 24 ounces salmon filet

Preparation

  1. Crush garlic.
  2. In a small saucepan, combine all ingredients except salmon. Heat to boil, reduce temperature to low and cook for 5 more minutes. This will be sauce for salmon.
  3. Meanwhile, preheat grill. Place salmon, skin side down, on a sheet of foil slightly larger than the fish. Fold up edges so sauce stays with salmon on grill. Place foil and fish on grill. Top salmon with sauce prepared above.
  4. Cover grill and cook for 12 minutes or until salmon is cooked. (Do not flip salmon). Cut salmon into six 4-ounce servings.

Helpful hints

  • Recipe calculated with farmed Atlantic salmon. Wild Alaskan salmon is slightly lower in fat and slightly higher in potassium and phosphorus. Both are acceptable healthy choices for a kidney diet.
  • You can also cook this recipe in the oven at 350°F for 10 to 15 minutes until done. A good rule of thumb is to allow 10 minutes for each inch of fillet thickness.
  • If you are on a lower protein diet adjust portion to match your meal plan.

I want to try this out, but if I prepare it for 3; I can just halve everything? Dietitian comment: Yes, this recipe should work well if the ingredients are divided in half.

Is there a way to change recipe servings from 6 to 2? Is there a way to change recipe servings from 6 to 2? Dietitian comment: Reduce salmon to 8 ounces uncooked and scale the other ingredients to 1/3 to 1/2 the original amount.

This recipe says its for CKD non-dialysis, but the salmon steak recipe was not for CDK non-dialysis. Is salmon the issue or the sauce? Moderator comment: Actually the salmon steak can be included for CKD non-dialysis as long as the portion matches the recommended ounces of protein in your meal plan. I will adjust the diet types.

Excellent results, terrific taste, easy to make. Because it was late in the day, I baked it at 400 degrees for ~12-14 minutes and it turned out great.
