This is an ok recipe but won't make it again. Would rather have directions using low sodium stock or water, and more specifically, how much liquid should be left at the end fhe recipe? Also agree with other poster, the oxtail needs longer slower cooking.

Why use bullion cubes when you could use low sodium beef stack? Bullion cubes are notoriously high in sodium and contain MSG. I bet the potassium levels would be lower as well if stock or broth were used instead of bullipn cubes. Dietitian comment: The sodium is lower, especially if you use a homemade or low sodium broth or stock. The potassium is 30 to 55 mg mg for 2 small bouillon cubes, but over 200 mg for 2 cups of beef broth. Some lower sodium broths contain potassium chloride and may exceed 400-600 mg potassium/cup, so always read the label to check ingredients.

In order for this to turn out you have to change the cooking time you have to simmer the oxtails for 5 hrs real slow. Then add veggies for the last 30 minutes. it's a fabulous dish. During the winter, we cook it on a wood stove and just let it simmer all day. it smells heavenly, this is one of the best soups/stews you will ever eat, if you have the patience.
