I am at a lost on what to eat. My diet consist only 50g of protein and 1500mg of sodium a day. I would love to be able to eat without fear. I log my protein and sodium and have not cheated in two years. I think that the salt content is too high. I will not even use this recipe because of the salt content. I can control my protein easily however sodium is very difficult. I find this recipe has zero rating for me..

At 361 mg sodium per serving this soup is still lower than reduced-sodium soups that are commercially prepared. You could substitute fresh cooked chicken for even lower sodium.

why not cook the soup with a raw chicken and avoid the prepared broth problems? Dietititian comment: Sure you can start with a fresh chicken instead of the prepared and will have plenty of low sodium broth to use.

This is a great recipe, some times I used the canned chicken, to make it faster and cheaper, it is quick and easy.

I would like to use the carcass from my home roasted chicken to make my broth. Will this add phosphorus to the broth? I don't salt my chicken. Dietitian comment: Yes there will be some phosphorus added as it leaches from the bones of the carcass. The phosphorus content is similar to the amount from canned broth[INVALID]-35-70 mg per cup.

Can you use the carcass from the rotisserie chicken to make the broth or would that have too much sodium when done? Before CKD I always made chicken soup using the carcass leftovers and I would add celery carrots and onions for flavor. Not sure if that is safe to do anymore. Thanks! Dietitian comment: I have occasionallyfound rotisserrie chicken without added seasoning, so the sodium is lower. Since there probably is some added salt or hig sodium seasonings I suggest count the broth as reduced sodium but not sodium free.

Like so many of the other comments, this soup went over very well with my husband. I'm keeping it on my list for future meals. Thanks so much for doing the research on what is necessary for a renal diet. It helps me feel more comfortable with what I'm preparing at mealtime.

My mom just started dialysis and has always been a salt lover. So I thought this may be a hard sell. Well, she loved it. I froze the rest in individual servings and froze them for days she is alone and can't cook. I will make this again.

I used Wylers instant SODIUM FREE broth mix instead. just as good and NO SODIUM! Moderator comment: A word of caution--Wylers sodium free broth, like many low sodium products, substitutes potassium chloride instead of sodium chloride. 1 teaspoon contains 500 mg potassium so this substitution is not recommended if you are on a low potassium kidney diet. Always read the ingredients to be sure.
