Turkey-Vegetable Chili

DaVita renal dietitian, Robin from Connecticut, updated the traditional recipe with low-fat turkey and fresh zucchini for a dialysis-friendly Turkey Vegetable Chili that won’t break the budget.

Portions: 6     Serving size: 3/4 cup

Ingredients

  • nonstick cooking spray
  • 1 tablespoon olive oil
  • 1 pound lean ground turkey
  • 1/2 cup onion
  • 2 garlic cloves 
  • 2 cups zucchini 
  • 14 ounces canned stewed  tomatoes, crushed
  • 2 teaspoon chili powder
  • 1-1/2 teaspoons ground cumin
  • 1-1/2 teaspoons paprika
  • 1/4 teaspoon cayenne pepper
  • 1/4 teaspoon black pepper 

Preparation

  1. Chop onion and zucchini. Mince garlic cloves.
  2. Spray pan with cooking spray and add oil.
  3. Sauté ground turkey, onion, garlic and zucchini until squash is tender.
  4. Drain excess liquid well.
  5. Add stewed tomatoes and spices.
  6. Simmer covered for approximately 1/2 hour.

  • 2 vegetables, medium potassium

Helpful hints

  • Two medium zucchini yields approximately 2 cups.
  • Substitute lean ground beef for turkey if desired.
  • Serve over cooked rice or pasta for a filling meal.
  • Be sure to count as 2 servings of vegetables in your daily meal plan to allow for the potassium in this recipe. If you are on a low-potassium diet, stick closely to the recommended portion.

I am new to this, but I thought that zucchini was one of the few low potassium veges. It sounds from reading the comments that it's not??? Dietitian comment: 1/2 cup of raw sliced zucchini contains 170 mg potassium, considered low enough for a low [potassium kidney diet. As suggested in the helpful hints, count one serving as 2 vegetable portions since the recipe also contains tomatoes.

This was very good, except way too spicy.2 tsps.chili power and 1 1/2 tsps cumin? way too much...next time I will use only 1/2 tsp.cumin.

Very good! I had to eliminate the zucchini due to the potassium levels. I used frozen carrots instead. I also used unsalted tomatoes since my husband is on a strict low-sodium diet.

This was a bust--zucchini does not belong in chili to start with. The same with stewed tomatoes. While I,realize chili powder should be used sparingly, with beef based chili, I,use two tab Espoons per pound of meat. So woul recommend an increase in chili powder, use crushed tomatoes with sauce and eliminate the zucchini.

I really enjoyed this recipe. I took it to our chili night at church because I knew the others would be eat up with sodium. I was the only one with no leftovers.

Yay, a dialysis recipe that has 14 ounces of tomato. I realize not all patients have to deal with potassium & phosphorus, but most do. Aside from the enormous dietary failure, this recipe actually looks like it would taste great.

Ok, I'm going to try this recipe but going to substitute zucchini with red/yellow or red bellpeppers to bring potassium and phosphorus way down. Going to try this tonight. Hopefully my daughter will not yell at me for cooking my dinner. she usally does. Will write more tomorrow to let you know.
