Stir-Fry Vegetables

Portions: 10     Serving size: 3/4 cup per serving

Ingredients

  • 1/4 cup canola oil
  • 3-1/2 cups green pepper 
  • 3-1/2 cups red pepper
  • 1-1/2 cups fresh sliced mushrooms
  • 1 cup celery  
  • 1/4 cup onion
  • 1 garlic clove
  • 1/2 teaspoon sugar
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 teaspoon wine vinegar
  • 1/2 green hard-ripe tomato
  • 1 cup canned sliced water chestnuts

Preparation

  1. Cut green and red peppers. Slice celery and chop onion. Crush garlic.
  2. In large skillet, heat oil. Add green pepper, red pepper, mushrooms, celery, onion, garlic, sugar, oregano, salt and pepper.
  3. Stir-fry over medium-high heat until peppers are crisp tender.
  4. Add vinegar, tomato and drained water chestnuts. Cook until heated thoroughly.

Helpful hints

  • One tablespoon of reduced-sodium soy sauce can be used instead of the salt.

This is really good. I omit the salt and use olive oil because it is better for the kidneys..also I don't make this much. I am the only person who is going to eat it.
