Pineapple Rice

Serving size:  1/2 cup

Ingredients

  • 1 cup drained pineapple tidbits, canned in its own juice (save the liquid)
  • 3/4 cup long grain white rice
  • 1/4 cup pineapple juice (drained from the canned pineapple)
  • 1-1/4 cups water

Preparation

  1. Mix together the pineapple, rice, pineapple juice & water in a saucepan. 
  2. Bring to a boil, cover and reduce heat.  Simmer for 20 to 25 minutes, until all of the water is absorbed and the rice is tender.
