Arroz con Gandules (Rice with Pigeon Peas)

Serving size: 1/2 cup
Ingredients
- 2 teaspoons olive oil
- 2 teaspoons of Sofrito (see recipe on DaVita.com)
- 1 teaspoon Bijol® (achiote or annotto powder)
- 1 tablespoon tomato paste
- 1 clove garlic
- 1 teaspoon oregano
- 1/2 small chicken flavor bouillon cube
- 3/4 cup canned pigeon peas, rinsed
- 2 cups long grain rice, dry
Preparation
- Heat 2 teaspoons oil in a large saucepan.
- Add Sofrito, Bijol® powder, tomato paste, chicken (optional), garlic, oregano, bouillon cube and the pigeon peas.
- Stir fry for approximately 3 to 4 minutes to seal in juices.
- In large sauce pan, prepare rice following the recipe on the package, omitting salt.
- Mix rice in with the ingredients in large saucepan.
- Serve.

For more protein add one-cup chopped chicken. Adds 4 grams of protein per serving. Use half a rotisserie chicken with the skin and bones removed to save time.

Bijol®, a brand name for achiote or annotto powder, gives a yellow-orange color to the rice. It is a replacement for saffron. If unavailable, substitute yellow food coloring or equal parts paprika and turmeric.

Frozen or dried cooked pigeon peas may be substituted for canned peas.

Not using salt is hard, I did not realize how much salt was in food until I reduced my usage. This site has allowed me to provide variety, new foods, and allow her to feel like she is not being deprived of good food. Her favorite was the Hearty Chicken Soup and the Meat loaf. As my father is a diabetic and suffers from gout, I am able to provide delicious meals for both. I am also benefiting from the decrease in salt. Please continue the great work.
