Savory White Rice

Portions: 8

Serving size:  1/2 cup

Ingredients

  • 1 cup white rice
  • 2 cups low-sodium chicken broth
  • 1/3 cup celery, thinly sliced
  • 1/3 cup green onion, thinly sliced
  • 1/3 cup mushrooms, thinly sliced
  • 1 teaspoon margarine
  • 1/2 teaspoon black pepper

Preparation

  1. Pour rice into saucepan.
  2. Add chicken broth to saucepan. Heat over medium-high heat until boiling.
  3. Add celery, green onion, mushrooms to boiling broth. Lightly press vegetables     into broth.
  4. Reduce heat to low and cover.
  5. Cook for 20 minutes or until broth has evaporated and rice is tender.
  6. Add margarine and pepper. Mix until rice is well coated.

The recipe as given is a good recipe with tendencies to be a little watery. You may use the recipe as is or alter: Use only 1 cup Broth Simmer to water evaporation Cover, reduce to lowest setting, heat 17 minutes. Remove from heat, uncover, rest 5 mins, gently fluff, rest 5 mins, fluff, rest 10 mins more, serve. Refrigerate/freeze for later use.

This recipe works better and the rice comes out not so mushy if you bring all ingredients to a boil and THEN add the rice.

I fix this all the time since I have a kidney disease and the steriods I take for it have given me diabetes. I now have to find recipes that are suitable for both my diseases. I give this a 4 star rating
