Fettuccini Alfredo

Serving size: 1 cup

Ingredients

  • 12 ounces dry fettuccini
  • 3 tablespoons unsalted margarine
  • 1 teaspoon garlic, minced
  • 3/4 cup red bell pepper, sliced
  • 2 tablespoons flour
  • 1/3 cup white wine
  • 3/4 cup unsalted chicken broth
  • 3/4 cup Coffee Rich® (nondairy creamer, in the dairy case)
  • 2 teaspoons dried parsley flakes
  • 1/4 teaspoon black pepper
  • 1/4 cup grated Parmesan cheese

Preparation

  1. Cook fettuccini according to package directions, omitting the salt.
  2. Drain fettuccini and set aside.
  3. Melt margarine in a medium saucepan.
  4. Add garlic and red bell pepper. Sauté one to two minutes until vegetables are soft.
  5. Slowly stir flour into the pan. Cook one minute until smooth.
  6. Add wine gradually, stirring until smooth.
  7. Add broth, Coffee Rich®, parsley and black pepper. Stir to blend.
  8. Gradually add Parmesan cheese. Reduce heat to low and cook 5 to 7 minutes until mixture starts to simmer. Stir occasionally. 
  9. Toss the sauce with the drained fettuccini.

I made this recipe tonight...delicious! My husband loves pasta. This is a simple recipe and I know I'll make it again. The sauce was just a little thinner than I'd normally like but still very enjoyable.(Kathy)

This was so good!!! My husband has difficulty chewing and hardly eatsw anything, had two helpings. I would have had two helpings, also, but wanted to same my P and K allowances for an ice cream strawberry banna-split.

Our greeter made this recipe for her parents who are both on dialysis. She reports that "they loved it" - it was easy to prepare and tasted great. Her dad, who doesn't like pasta, ate two servings and said he was thinking about going back for a third.
