Rice Pilaf

Diet - CKD, Dialysis, Diabetes

Yield: 8 portions

Serving size:  ½ cup

Ingredients

  • 1/4 cup margarine
  • 1/4 cup white onion, chopped
  • 1/2 cup chopped celery
  • 1 cup white rice, uncooked
  • 1 cup vermicelli broken into small pieces
  • 1-1/2 cups reduced sodium chicken broth
  • 1-1/2 cups water
  • 1 tablespoon parsley

Preparation

  1. Melt margarine in a skillet that has a cover.
  2. Sauté onion and celery for 1 minute. 
  3. Add the rice and vermicelli and stir for 30 seconds. 
  4. Add the chicken broth, water and parsley. Bring to boil.
  5.  Cover and reduce to simmer about 15 minutes until all the liquid is absorbed.
