Chicken Salad

Joyce, a DaVita renal dietitian from Pennsylvania, sought advice from a group of tough culinary critics known for their discerning taste and high standard of quality — her dialysis patients. She got two thumbs-up for her Chicken Salad recipe featuring apple, celery and cinnamon. This kidney-friendly recipe is big on flavor and a likely hit with your own group of kitchen critics.

Portions: 4     Serving size: 1 cup

Ingredients

  • 1-1/2 cups cooked chicken
  • 1/2 cup celery
  • 2 cups apples
  • 3/4  cup seedless grapes
  • 1/4 cup mayonnaise
  • 1/4  teaspoon ground cinnamon
  • 1/2  teaspoon lemon juice

Preparation

    1. Cube cooked chicken. Dice celery and apples. Cut grapes in half.
    2. In a large bowl, combine chicken, celery, apples and grape halves.
    3. Add mayonnaise, cinnamon and lemon juice. Stir to coat ingredients.
    4. Chill at least 30 minutes before serving.

I also add onion to my tuna salad and pecans in small portions. Just like the Arby's chicken pecan salad.

Great recipe; I added some dill weed and fresh ground black pepper and mixed in six sliced, water rinsed, kalamata olives!

how can I lower the phosphorus content? Moderator comment: You could reduce the portion from 1 cup to 3/4 cup but 122 mg phosphorus with 16 grams of protein is not bad at all.

There is mayonnaise in these recipes and mayonnaise has salt and I cannot have salt. Why would you use something with salt in it even at the amount in this recipe? Moderator Note: You could use a low sodium mayonnaise instead or regular to further reduce the sodium. Since one portion is below 140 mg sodium it is still considered to be a low sodium dish with the regular mayonnaise.
