Pineapple Slaw

Enjoy fruit and vegetables in a delicious Pineapple Slaw by DaVita renal dietitian Barbara in Arizona. She keeps it simple, healthy and kidney-friendly with only four tasty ingredients.

Recipe modified from a 4-H cookbook and submitted by DaVita renal dietitian Barbara from Arizona.

Portions: 8     Serving size: 1/2 cup


  • 2-1/2 cups green cabbage, shredded
  • 1/2 cup carrots, shredded
  • 20 ounces canned crushed pineapple in unsweetened juice
  • 1/4 cup dried, sweetened cranberries


  1. Shred cabbage and carrots and combine in a 2 quart bowl.
  2. Add crushed pineapple with juice and dried cranberries to bowl.
  3. Mix slaw ingredients together and chill in refrigerator at least 30 minutes before serving.

  • 1/2 vegetable, low potassium

Helpful hints

  • Shred cabbage into coleslaw size pieces using a food processor or chop with a sharp knife.
  • 2-1/2 cups shredded cabbage is approximately 3/4 of a small head of cabbage.

I made this and it was lacking in flavor. I think it would taste better with some low cal mayo of some kind.It was wasted, not eaten.
