Southwest Tuna Salad

Portions:  3

Serving size:  1/2 cup

Ingredients

  • 1/2 cup mayonnaise (regular or reduced fat, as desired)
  • 2 fresh jalapeño peppers, seeded and finely chopped
  • juice of 1/2 fresh lime (or 2 teaspoons lime juice)
  • one 6-ounce can water-packed tuna, drained well and flaked
  • 1 cup cucumber, seeded and cubed
  • 2 green onions, chopped

Preparation

  1. In medium bowl, combine mayonnaise, jalapeño pepper and lime juice.
  2. Stir in drained tuna. Mix well. 
  3. Add cucumber and green onions. Chill until ready to eat.
  4. Serve a scoop of Southwest Tuna Salad on lettuce or on a bagel or bread of choice. Garnish with chopped cilantro if desired.

Helpful Hints

  • Make ahead and chill so flavors blend. You can substitute chicken for tuna, it’s just as yummy.
  • Analysis includes reduced-fat mayonnaise. If regular is used fat equals 30 grams per serving.
