Italian Chicken Salad

Recipe submitted by DaVita renal dietitian Anne from Pennsylvania.

Portions:  4

Serving size:  Approximately 1-1/4 cups, plus 1/2 cup arugula or romaine lettuce.

Ingredients

  • 1/2 cup mayonnaise (regular or reduced-fat, but NOT fat-free)
  • 1/4 cup lemon juice, freshly squeezed if available
  • 2 tablespoons Italian flat-leaf parsley, snipped into small pieces
  • 1/8 teaspoon cayenne pepper (optional, to taste)
  • 4 cooked chicken breast halves (left over from Chicken in Rosemary-Garlic Sauce if available)
  • 1 red or orange bell pepper, chopped into small to medium pieces
  • 1/4 cup sweet onion, finely chopped
  • 2 cups grilled summer squash (leftover from Grilled Summer Squash recipe if available), sliced into half moons
  • additional Italian flat-leaf parsley for garnish (optional)
  • 2 cups baby arugula or baby romaine leaf lettuce

 Preparation

  1. Mix mayonnaise, lemon juice, snipped parsley and optional cayenne pepper in a mixing bowl.
  2. Chop chicken into 1/2-inch cubes.
  3. Add chopped chicken, pepper, onion and squash to the mayonnaise and toss to coat.
  4. Chill at least one hour to allow flavors to blend.
  5. Serve over 1/2 cup of baby arugula or baby romaine lettuce.

  • Feel free to experiment with different combinations of herbs such as basil, rosemary, thyme, savory, oregano, etc., depending upon your personal tastes and availability and costs.
  • If you are following a lower protein diet reduce chicken portion to half or to the amount recommended by your dietitian.
