Vallie’s Fruit Salad

Diet - CKD, Dialysis, Diabetes

Portions:  20

Serving size:  1/2 cup

Ingredients

  • one 20-ounce can crushed pineapple, packed in juice
  • two 15-ounce cans fruit cocktail, no sugar added
  • 5 cups miniature marshmallows
  • 8 ounce container light Cool Whip®dessert topping, thawed
  • 1 tablespoon shredded coconut (optional)

Preparation

  1. Thoroughly drain canned fruits in colander for approximately 3 hours.
  2. In a large bowl, combine canned fruits, marshmallows and Cool Whip® and mix until well blended.
  3. Cover and chill overnight.
  4. Sprinkle shredded coconut over salad, if desired, and serve.
