Mandarin Chicken Salad

Serving size: ½ cup
Ingredients
- 1-½ pounds boneless, skinless chicken breast
- ¼ cup green onions, finely chopped
- ½ cup celery, finely chopped
- ½ cup low fat mayonnaise
- ½ cup mandarin oranges, drained
Preparation
- Preheat oven to 350° F.
- Arrange chicken in a baking pan and bake until done, approximately 45 minutes. Remove cooked chicken from oven and let cool.
- Chop chicken into fine pieces and place in a large bowl. Add green onions, celery and mayonnaise. Mix well. Chill until ready to serve.
- Before serving, cut mandarin orange section in thirds and fold into the chicken salad.

- To increase the protein content of this recipe for people on a high protein diet, ¼ cup of protein powder may be added.
- For those with chronic kidney disease not on dialysis (CKD non-dialysis), you may need to decrease the portion size according to your meal plan if you are on a protein-restricted diet. Consult with your dietitian for help.
