Mandarin Chicken Salad

Serving size:   1/2 cup

Ingredients

  • 1-1/2 pounds boneless, skinless chicken breast
  • 1/4 cup green onions, finely chopped
  • 1/2 cup celery, finely chopped
  • 1/2 cup low fat mayonnaise
  • 1/2 cup mandarin oranges, drained

Preparation

  1. Preheat oven to 350° F.
  2. Arrange chicken in a baking pan and bake until done, approximately 45 minutes. Remove cooked chicken from oven and let cool.
  3. Chop chicken into fine pieces and place in a large bowl. Add green onions, celery and mayonnaise.  Mix well. Chill until ready to serve.
  4. Before serving, cut mandarin orange section in thirds and fold into the chicken salad.

  • Serve on bread or rolls as a sandwich or use as a spread on crackers for a high protein snack.
  • To increase the protein content of this recipe for people on a high protein diet, 1/4 cup of protein powder may be added.
  • For those with chronic kidney disease not on dialysis (CKD non-dialysis), you may need to decrease the portion size according to your meal plan if you are on a protein-restricted diet. Consult with your dietitian for help.
