Cilantro Coleslaw
Recipe submitted by DaVita dietitian Helen from Colorado based on a recipe she tried at Fiesta Jalisco Mexican Restaurant in Silverthorne, Colorado.

Serving size: 2/3 cup
Ingredients
- 4 cups coleslaw mix
- 1/2 cup cilantro, chopped
- 1/4 cup red bell pepper, finely diced
- 2 tablespoons olive oil
- 1/4 cup fresh lime juice
- 1 teaspoon cumin
- 1/2 teaspoon chili powder (use ancho chili powder if you like it spicy)
Preparation
- Toss coleslaw mix, cilantro and red pepper together.
- Whisk olive oil, lime juice, cumin and chili powder together in a small bowl.
- Pour dressing over slaw mixture, toss until coated and serve.

1 reviews | Avg. User Rating:We tried this today and thought it was tasty. Our only complaint, is that it has a little too much lime juice but that is easily fixed. We will make it again. We had it with a pork rib recipe we've adapted from the Taste of Home Magazine.
