Cilantro Coleslaw

Recipe submitted by DaVita dietitian Helen from Colorado based on a recipe she tried at Fiesta Jalisco Mexican Restaurant in Silverthorne, Colorado.

Portions: 6

Serving size: 2/3 cup

Ingredients

  • 4 cups coleslaw mix
  • 1/2 cup cilantro, chopped
  • 1/4 cup red bell pepper, finely diced
  • 2 tablespoons olive oil
  • 1/4 cup fresh lime juice
  • 1 teaspoon cumin
  • 1/2 teaspoon chili powder (use ancho chili powder if you like it spicy)

Preparation

  1. Toss coleslaw mix, cilantro and red pepper together.
  2. Whisk olive oil, lime juice, cumin and chili powder together in a small bowl.
  3. Pour dressing over slaw mixture, toss until coated and serve.
