It’s-Better-than-Potato Salad

Yield: 10 servings 

Serving size: 1/2 cup

Ingredients

  • 1 cup uncooked rice or salad pasta (elbow, mini shells, salad macaroni)
  • 1-1/4 cups mayonnaise or salad dressing
  • 2 cups celery, sliced
  • 1 medium purple (sweet) onion, finely chopped
  • 4 teaspoons prepared mustard
  • 4 hard-cooked eggs, chopped
  • 8 radishes, sliced
  • 1 cucumber, pared and diced

Preparation

  1. Cook rice or pasta according to package directions without added salt.  Refrigerate to chill.
  2. Add mayonnaise, celery, onion and mustard to chilled rice or pasta. Mix well and refrigerate until ready to serve.
  3. Stir in eggs, radish slices and cucumber before serving chilled salad.

This is really good. I also omitted the radish and cucumbers and just used bell peppers and celery. Yummy
