Apple Cranberry Slaw with Celery Seed Dressing

Everyone knows fruits and vegetables are packed full of antioxidants and health-promoting phytochemicals. DaVita dietitian Arlene from California has found a way to help dialysis patients get their share of these healthy substances. She created her kidney-friendly Apple Cranberry Slaw with Celery Seed Dressing, low in potassium and sodium and full of flavor.

Portions: 8     Serving size: 1 cup


  • 1/2 medium cabbage head
  • 1 medium red apple
  • 2 tablespoons onion
  • 1/2 cup dried cranberries, sweetened
  • 1/4 cup toasted sliced almonds
  • 1/2 cup canola oil
  • 1/4 cup sugar
  • 1/4 cup cider vinegar
  • 1/2 tablespoon celery seed
  • 1/2 teaspoon dry mustard


  1. Shred cabbage and chop apple into small pieces. Grate onion.
  2. Combine remaining ingredients to make celery seed dressing; mix vigorously. 
  3. Pour over slaw and toss.

  • 1 vegetable, medium potassium
  • 1 fruit, low potassium
  • 3 fat

Carbohydrate choices


Helpful hints

  • The dressing is best when made ahead and chilled.
  • Celery seed dressing is great with any green salad.
  • To reduce carbohydrate to 8 grams and 1/2 carbohydrate choice you can substitute low calorie sweetener and reduce cranberries to 1/4 cup.

I'm new at this. Why are almonds allowed when the diet given says no nuts? Dietitian comment: The reason nuts are limited on the kidney diet is due to high potassium and phosphorus content. However, you can still add a small amount to recipes if you are maintaining normal potassium and phosphorus levels. The 1/4 cup of slivered almonds in this recipe divided by 8 servings provides 22 mg potassium and 15 mg phosphorus per serving, whish is a very small amount.
