Creamy Cucumber Salad

Ingredients

  • 1 medium cucumber
  • 1/3 cup sour cream
  • 2 tablespoons white vinegar
  • 1 tablespoon sugar
  • 1/8 teaspoon black pepper
  • 1 tablespoon fresh dill weed 

Preparation

  1. Thinly slice cucumber.
  2. Mix together sour cream, vinegar (or lemon juice), sugar (or sweetener) and pepper.
  3. Combine mixture with cucumbers. Chill before serving.
  4. Garnish with fresh chopped dill weed if desired.

  • Replace vinegar with lemon juice if preferred.
  • For a variation add 2 tablespoons chopped onion or chives.

Love it! Refreshing side dish for a hot summer day. I added 1 tablespoonful of chopped red onion, and to avoid a trip to the store I used apple cider vinegar and dill weed from my spice rack and it still came out great. Next time I make it,(soon!) I will probably cut the sugar back to 1 teaspoonful.

I made this but didn't add the sour cream, I don't like sour cream & I used sweetner & added extra vinegar & it still is too sweet so, what can I do? I'm going to add extra cucumbers & more vinegar today, does anyone have any suggestions? Thanks. Dietitian comment: Try omitting the sweetener and see how it tastes. Be sure the vinegar you use is not seasoned. Some seasoned vinegar,s like seasoned rice vinegar, contain sugar.

can I use salad dressing or mayo in place of sour cream?? Dietitian comment: You can but be aware the fat and sodium content is higher with this change.

This was fantastic. I loved it. My wife added a little more dill and used lemon. I put it on top of my lettuce.

I make this for my father-in-law using the lemon juice, light sour cream, and sugar substitute. It's quick, easy, and he loves it!

I have a different creamy cucumber salad option. It must have come from Mrs. Dash. 1 lg cucumber thinly sliced 2 tsp Mrs. Dash Garlic/Herb 1 tsp Mrs. Dash lemon/pepper 1 1/2 Tbs vinegar 1 1/2 tsp sugar 1/2 cup sour cream 1/2 cup chopped onion Mix together and chill 1-2 hours before serving. I make this and use 3 tbs. on top of lettuce replacing salad dressing.
