Creamy Fruit Salad

Enjoy kidney-friendly recipe Creamy Fruit Salad by Akemi from Nebraska. Fruits in the recipe can be substituted with any low potassium fruits of your choice, and if low sugar or no sugar is a must, substitute artificial sweetener.

Portions: 14     Serving size: 3/4 cup


  • 2 medium apples 
  • 2 medium fresh pears
  • 15 ounces canned peaches in light syrup
  • 1-1/2 cups fresh strawberries
  • 1-1/2 cups green grapes
  • 4 ounces low-fat cream cheese
  • 2 tablespoons sugar
  • 1 tablespoon sour cream
  • 6 ounces Cool Whip® dessert topping
  • 1/2 cup fresh berries


    1. Cut apples, pears and peaches into bite-size pieces. Cut strawberries into quarters.
    2. Place cut fruit in a large bowl. Set aside. 
    3. In a medium bowl, mix cream cheese, sugar, and sour cream until smooth. Stir in Cool Whip® and mix well. 
    4. Just before serving, pour cream cheese mixture over fruit and gently stir. 
    5. Top with fresh berries and serve.

Helpful hints

  • Substitute with any low potassium fruits of your choice.  Make it colorful!  (blueberries, raspberries, blackberries or a mixture).
  • This is my family’s favorite fruit salad recipe and a great potluck item. It’s best to eat it the same day because it can get watery overnight.
  • Reduce ingredients in half to make a smaller amount.

20 grams is an entire day's allotment for someone using a low carb way of eating. Too much sugar.. :( Dietitian comment[INVALID] Each person has individual nutrient requirements.

Too high in carbs and way too much potassium for one serving. Dietitian comment: With only 20 grams carbohydrate and 167 mg potassium this recipe is not considered to be high carb or potassium for most people.

Tried this recipe and instead of putting the cream cheese mixture over it , I put in separate bowls so that I may take this for work all week. The topping gets a bit solid but I a spoonful of the topping and then put it on the fruit..very very good ...of course my family wants it to be creamier like the recipe calls for.
