Creamy Fruit Salad

Portions: 14     Serving size: 3/4 cup

Ingredients

  • 3 cups fresh apples, cut into bite-size pieces (approx. 2 medium apples)
  • 2 cups fresh pears, cut into bite-size pieces (approx.  2 pears)
  • one 15-ounce can peaches in light syrup, drained and cut into bite-size pieces
  • 1/2 pound fresh strawberries cut in half or quarters, depending on size
  • 1-1/2 cups green grapes
  • 4 ounces low-fat cream cheese, softened
  • 2 tablespoons sugar or sugar substitute with equal sweetness
  • 1 tablespoon sour cream
  • 6 ounces Cool Whip® non-dairy dessert topping
  • 1/2 cup fresh berries (blueberries, raspberries, blackberries or a mixture)
     

Preparation

    1. Place apples, pears, peaches, strawberries and grapes in a large bowl. Set aside. 
    2. In a medium bowl, mix cream cheese, sugar, and sour cream until smooth. Stir in Cool Whip® and mix well. 
    3. Just before serving, pour cream cheese mixture over fruit and gently stir. 
    4. Top with fresh berries and serve.

Helpful hints

  • Fruits can be substituted with any low potassium fruits of your choice.  Make it colorful!
  • This is my family’s favorite fruit salad recipe and a great potluck item. It’s best to eat it the same day because it can get watery overnight.
  • Reduce ingredients in half to make a smaller amount.
