Creamy Fruit Salad

Serving size: 3/4 cup
Ingredients
- 3 cups fresh apples, cut into bite-size pieces (approx. 2 medium apples)
- 2 cups fresh pears, cut into bite-size pieces (approx. 2 pears)
- one 15-ounce can peaches in light syrup, drained and cut into bite-size pieces
- 1/2 pound fresh strawberries cut in half or quarters, depending on size
- 1-1/2 cups green grapes
- 4 ounces low-fat cream cheese, softened
- 2 tablespoons sugar or sugar substitute with equal sweetness
- 1 tablespoon sour cream
- 6 ounces Cool Whip® non-dairy dessert topping
- 1/2 cup fresh berries (blueberries, raspberries, blackberries or a mixture)
Preparation
- Place apples, pears, peaches, strawberries and grapes in a large bowl. Set aside.
- In a medium bowl, mix cream cheese, sugar, and sour cream until smooth. Stir in Cool Whip® and mix well.
- Just before serving, pour cream cheese mixture over fruit and gently stir.
- Top with fresh berries and serve.

Helpful hints
- Fruits can be substituted with any low potassium fruits of your choice. Make it colorful!
- This is my family’s favorite fruit salad recipe and a great potluck item. It’s best to eat it the same day because it can get watery overnight.
- Reduce ingredients in half to make a smaller amount.
