OMG!! Made this for our Thanksgiving meal this year, and everyone LOVED it! However, the only tweeking we did to it was to add 1/2 tsp. sugar to it. DELICIOUS!!! Definitely will be making more of this in the future!

Hi--I am going to be cooking for a picnic and my nephew (who is on dialysis). My questions: I am also cooking for a person with celiac's and my pasta will be Tinkyada brown rice pasta--since packages don't go into enough detail, will this substitution also be suitable for my nephew? Also, I make my own mayonnaise (verry easy to do if you have an immersion blender!!) so I can control the sodium--but are there any oils I should avoid (I usually use canola oil)? I can put my recipe into nutritiondata.com to check the nutrition levels, including potassium, but are you using reguar standard mayo (like Helmen's)so I can compare the data side by side? Thanks for the input!! This is a great site and I will be making several of your recipes this weekend! Moderator response:The brown rice pasta will add 15 mg potassium and 10 mg phosphorus per serving--still kidney-friendly! Yes, this recipe uses regular commercially prepared mayonnaise in the analysis.

My husband ate and ate and ate this salad and he is NOT a Dialysis patient, I am...I had to battle him for a bowl of this yummy salad!! Make it, you will love it. I did add a little chopped cilantro to kick it up a notch. Was great.

This recipe is wonderful! It is full of flavor and lots of crunch while also being filling. My husband, who is not a kidney patient, loves it as well. It's as good as any macaroni salad I have made before I was a kidney patient. Try it, you'll like it just like Mikey does!
