Lime Gelatin Salad with Cottage Cheese

Now, the jelly-mold salad is back with a twist—cottage cheese and pineapple! Libby from Virginia updated this classic to one that is kidney-friendly and calls it Lime Gelatin Salad with Cottage Cheese.

Portions: 10     Serving size: 1/2 cup


  • 1/2 cup celery
  • 20 ounces canned crushed pineapple, packed in juice
  • 1 small box sugar-free lime gelatin mix
  • 1 cup liquid nondairy creamer
  • 2 cups cottage cheese


  1. Finely dice celery.
  2. Drain juice from pineapple into a pan. Bring to a boil and remove from heat.
  3. Pour gelatin powder into the juice. Stir until dissolved.
  4. Stir in pineapple, nondairy creamer, cottage cheese and celery.
  5. Pour into a 9" x 13" dish and refrigerate. Stir every 15 minutes to combine ingredients evenly, until gelatin begins to set.
  6. Chill at least one hour longer before serving.

Helpful hints

  • Serve as an appetizer, salad or dessert. Serving suggestions:
    • Divide into 10 equal portions. Place each serving on a lettuce-lined plate.
    • Spoon a 1/2-cup serving into a parfait glass and top with whipped topping.

This recipe was very good. Takes the place of a lime gelatin with cottage cheese (with all the not so good add in's), that my husband always had as a child his mother always made for holiday meals. He found it very acceptable as a replacement. I loved it! Give it a try I think you'll love it. :>?
