Macaroni Salad

No picnic is complete without Macaroni Salad, and this one happens to be kidney-friendly.

Recipe from "Kidney Kooking" cookbook from the National Kidney Foundation of Georgia. Submitted by DaVita dietitian Beverly from Georgia.

Portions: 16     Serving size: 1/2 cup


  • 12 ounces macaroni, uncooked
  • 1/2 cup onion
  • 1/2 cup green peppers
  • 1/2 cup celery
  • 1/4 cup pimentos
  • 3 hard boiled eggs
  • 1/2 cup mayonnaise
  • 1 teaspoon dry mustard
  • 1/8 teaspoon black pepper  
  • 1/8 teaspoon paprika


  1. Cook macaroni, rinse under cold water and drain well.
  2. Chop onion, green peppers, celery, pimentos and hard boiled eggs.
  3. Combine all ingredients: macaroni, pimentos, onions, green pepper, eggs, mayonnaise, celery and mustard. Mix well.
  4. Sprinkle paprika and black pepper over top.
  5. Chill before serving.

Helpful hints

  • 12 ounces uncooked macaroni equals 3 cups cooked.
  • For variety, use oil and vinegar instead of mayonnaise. Sodium will be lower.
  • For a twist, omit onions or celery and add green peas, cucumbers or parsley.
  • Leftover portions will keep in the refrigerator up to 5 days.

Macaroni Salad



This has eggs in it and it has mayonnaise in it. I am sure it is delicious but I am not willing to compromise my diet. The eggs is as I was taught, a protein and I can only have six ounces a a day. I guess it is different because I am not yet on dialysis so I have to follow a stricter diet. Who knew??? Moderator Note: For a lower protein diet you can omit the eggs and protein is 2.5 grams per serving.

I thought this recipe was pretty tasty. It was not a lot different than any other macaroni salad, which makes it nice that it can be both "renal friendly" and just like an old favorite.
