Sweet and Sour Cucumbers

Did you know that cucumber is a fruit? Commonly thought of as a vegetable, cucumbers have a light, fresh taste and readily absorb the flavors of other food and spices. Sandy, a DaVita renal dietitian from Colorado, teamed fresh cukes with onions and a sweet vinegar marinade to make Sweet and Sour Cucumbers. This lip-smacking, kidney-friendly salad has flavor in every bite.

Portions: 6     Serving size: 1/2 cup

Ingredients

  • 3 medium cucumbers
  • 1 medium white onion
  • 1/4 cup sugar
  • 1/2 cup white wine vinegar
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt (optional)

Preparation

  1. Slice cucumbers and onions about 1/8-inch thick. Place in a large bowl.
  2. Combine sugar and vinegar. Mix until sugar is dissolved completely. Add additional sugar or vinegar to desired taste.
  3. Pour over cucumbers and onion. Add salt and pepper.
  4. Cover bowl with plastic wrap and set in refrigerator at least 2 hours.
  5. Serve in small salad bowls as a salad or snack.

Helpful hints

  • The longer cucumbers and onions marinate, the softer they become and more flavors are absorbed also.
  • Sweet and Sour Cucumbers can be stored in a canning jar. Great for gifts.

This was a great salad, made it for a family party and everyone loved it. I chopped up the leftovers and put on my salad the next day in place of salad dressing and it was awesome.
