Basic Meat Coating Mix

Diet - CKD, Dialysis, Diabetes

Serving size 1½ tablespoon for 1 piece of meat

Ingredients

  • 1 cup dry unseasoned breadcrumbs
  • ¼ teaspoon black pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon basil
  • ½ teaspoon dried celery leaves
  • ½ teaspoon paprika

Preparation

  1. Blend ingredients in a food processor or a blender.
  2. Dip fresh meat into margarine or oil, then coat with coating mix, one piece at a time.
  3.  Bake meat in the oven or fry in a skillet.

Helpful hints

  • Make homemade dry breadcrumbs by toasting bread in the oven until dry and crisp. Process in a food processor or blender to make crumbs.
  • This mix keeps well in the freezer. Make extra for later use.
  • Try the following variations for additional flavors:
    • Beef or veal: add ½ teaspoon marjoram or oregano
    • Chicken: add ½ teaspoon thyme and ½ teaspoon sage
    • Pork: add ½ teaspoon dried tarragon or ¼ teaspoon allspice
