Blackberry Sauce

Ingredients

5 cups fresh or frozen blackberries

1 cup + 2 tablespoons water (divided use)

3/4 cup sugar

1 tablespoon cornstarch

1 tablespoon lemon juice
Preparation

Crush berries then combine with 1 cup water and sugar in a large saucepan. Bring mixture to a boil.

Combine cornstarch with 2 tablespoons water. Mix well and stir into blackberry mixture. Cook 1 minute over medium high heat to thicken sauce, stirring constantly.

Remove from heat and add lemon juice. Chill in refrigerator until ready to serve.

Sugar substitute may be used to replace sugar. Carbohydrate is reduced to 6 grams per serving; carbohydrate choice is reduced to 1/2.
