Apple and Raisin Compote for Pork

Got a special event coming up? A picnic or church festival? How about a holiday or wedding reception? DaVita renal dietitian, Cindy sent along her patient, Bryan's, kidney-friendly recipe for Apple and Raisin Compote for Pork.

Recipe by DaVita patient, Bryan, submitted by DaVita dietitian Cindy from Pennsylvania.

Portions: 10     Serving size: 1/4 cup cooked

Ingredients

  • 1/2 cup unsalted butter
  • 5 cups Granny Smith apples
  • 1/2 cup brown sugar
  • 1/2 cup raisins
  • 1/4 cup apple juice 

Preparation

  1. Peel, core and slice apples.
  2. Melt butter in a pan. Add apples and stir to coat apple slices with butter.
  3. Sprinkle brown sugar over apple slices and toss to coat.
  4. Add apple juice and raisins. Bring to a boil then reduce heat and simmer for 10 minutes.

  • 1/2 high calorie

Helpful hints

  • Use compote to top pork roast, pork chops or leftover pork.
  • Substitute dried cranberries for raisins and leave peel on apples for a festive holiday appearance.
  • Substitute apple juice with apple brandy, if desired.
  • Substitute trans fat free margarine for butter if desired.
  • To reduce carbohydrate substitute brown sugar blend or substitute for brown sugar.

Served this with pork loin and it was incredible. Don't just save this for pork. It is so versitile my husband ate the leftovers on toasted english muffins. It did not say how thick to slice the apples, so I did a thick lazy slice, it just took a bit more liquid and more time to make sure the apples were soft. So allow 20 - 30 minutes for full cook time.
