Stewing your own large tomatoes works for me. Combine with olive oil and garlic. Add half cup of red wine. Simmer for thirty minutes and yum! Dietitian comments: Potassium is higher if you make a tomato-ony sauce. It really depends on your daily nutrient goals for potassium and the portion size.

I played with this recipe some. I used the fresh canned tomato sauce I made this past summer. I roasted my own red peppers, which was extremely simple. I added finely chopped fresh basil, thyme, oregano & parsley instead of the dried Italian seasoning. I made a large batch to freeze, added a small diced onion. And cooked everything down on the stove top for a couple hours. It's frozen in 1oz containers for single serving uses. I needed something to substitute tomato sauce for my 4 yr old kidney patient at his school. It turned out absolutely amazing!!! I expect to be enjoying some of this myself.

This really is a great recipe. I used it for spaghetti sauce. I also added mushrooms and ground beef, I'll probably add some onions next time. Excellent substitute! maybe even better that regular spaghetti sauce.

Great recipe. If you can't find roasted red pepper and don't want to roast them yourself, you can find them in your grocery in jars usually where the pickles and olives are. Costco has a great price on a large jar.

Mmm... thank you. I've been missing a good Italian meal. This was pretty good, but I did doctor it a bit to make it a complete meal. I sauteed some onions and peppers then added ground beef. Made the sauce per the recipe, but added some fresh basil. Then I poured that into my meat and let it simmer for a good half hour. Yummy!

I couldn't find roasted red peppers so I had to do research on how to roast my own. Mother wasn't thrilled but ate it because of my efforts. She said it wasn't awful, which is good because we have left over for another time. Add a little hamburger and mushrooms to help out.

I have made this several times and it is absolutely delicious. I use one of those mini food processors that hold about a cup, use a couple of peppers and a couple of tbsp. of low-sodium tomato sauce and spices. This makes just enough for my portion while the rest of the family uses the rest of the jar of sauce. I've used it over spaghetti, stuffed shells, and veal patties to make veal parmesan. Thank you, Sara, for a delicious alternative for some of my favorite foods!
