Firehouse Chili

Firehouse Chili is a kidney-friendly recipe that's sure to please the crowd at your next potluck.

Portions: 4     Serving size: 1-1/2 cups


  • 1-1/4 pounds lean ground beef
  • 1 cup onion
  • 1/2 cup bell pepper
  • 3/4 cup water
  • 1 tablespoon chili powder
  • 1 teaspoon sugar
  • 1 teaspoon ground cumin
  • 1 garlic clove
  • 1 cup Mexican-style stewed tomatoes with jalapeno peppers and spices
  • 2 cups spiral macaroni, cooked 


  1. Chop onion and bell pepper.
  2. In a large nonstick skillet, cook the ground round over medium-high heat until brown, stirring to crumble. 
  3. Add onion, bell pepper, water, chili powder, sugar, cumin and garlic. Cook for 7 minutes or until onion is tender. 
  4. Stir in the tomatoes (undrained); bring to a boil.  Reduce heat; simmer, partially covered, for 1 hour.
  5. Add cooked pasta and cook 15 minutes. Serve hot.

  • Since this chili has 559 mg potassium it is important not to exceed the 1-1/2 cup portion size. To complete your meal you may want to include low sodium crackers, a roll or slice of bread.

My husband has now made this for me 6 times. It is our emergency go to meal because he can cook it quickly and have leftovers for a pre-dialysis lunch since I'm on 3rd dialysis shift. We did some substituting. In stead of the 1 cup Mexican-style stewed tomatoes with jalapeno peppers and spices, we used the low sodium Hunts diced tomatoes. In stead of 2 cups spiral macaroni, cooked , we used white rice.

This was good, but next time I think I will use diced tomatoes instead of the stewed tomatoes. I just didn't break them down small enough. I will also add more spices as previous reviewers did.

Can I serve this dish over white rice instead. If so how do my nutritional numbers change. Dietitian Comment: If you substitute 1/2 cup of cooked white rice the carbohydrate will be about 8 grams more per serving and about 30 additional calories. The sodium, potassium and phosphorus change only slightly.

IF you reduced the serving size to 1 cup or 1 and a quarter cups instead of 1.5 cups, would it then be CKD safe? What if you only used 1 pound of meat instead of 1 & 1/4 pounds to start with? What about Ground Chicken breast or Turkey instead of Beef? THanks! Moderator: Yes, if you reduce portion size or use half the meat in the recipe the protein, potassium, and phosphorus are lower. If you substitute groud turkey or chicken you should still decrease the amount.

We thought this was a great meal. I do make my own Mexican seasoning blend that is salt free and added that as well as a little extra garlic. This one is a keeper!

My husband loved this chili. He didn't even miss having beans in it. My son who always salts everything that I make for my Husband said that it had enough zip that it didn't need any. The one change I made was to brown the meat with Mrs. Dash Southwest Blend and that added more heat.
