Barley and Beef Stew

Barley and Beef Stew is a warm and delicious way to get protein in the dialysis diet. You can enjoy this hearty meal for lunch or dinner.

Portions: 6     Serving size: 1-1/4 cups

Ingredients

  • 1 cup pearl barley, uncooked
  • 1 pound lean beef stew meat
  • 2 tablespoons all-purpose white flour
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon salt
  • 2 tablespoons canola oil
  • 1/2 cup onion
  • 1 large stalk celery
  • 1 garlic clove
  • 2 medium carrots
  • 2 bay leaves
  • 1 teaspoon Mrs. Dash® onion herb seasoning

Preparation

  1. Soak barley in 2 cups of water for 1 hour.
  2. Dice onion and celery. Mince garlic clove. Slice carrots 1/4-inch thick. Cut beef into 1-1/2 inch cubes.
  3. Place flour, black pepper and stew meat in a plastic bag. Shake to dust stew meat with flour.
  4. Heat oil in a heavy 4-quart pot and brown the stew meat. Remove meat from pot.
  5. Sauté and stir onion, celery and garlic in meat drippings for 2 minutes. Add 2 quarts of water and bring to a boil. Return meat to the pot. Add bay leaves and salt. reduce heat to a simmer.
  6. Drain and rinse barley, then add to the pot. Cover and cook for 1 hour. Stir every 15 minutes.
  7. After 1 hour add sliced carrots and Mrs. Dash® herb seasoning. Simmer for another hour. Add additional water if needed to prevent sticking.

Helpful hints

  • For a CKD non-dialysis lower protein diet, decrease beef to 8 ounces per recipe.  Protein will be decreased to 14 grams per serving.

What is the oxalate content of this recipe? I have to do low oxalate. Any suggestions for recipies? Dietitian comment: Sorry we do not have the analysis for oxalate content. A comparison of the ingredients to a list of low, medium and high oxalate foods reveals barley is a medium and celery is a high source of oxalate.

In making this recipe again, made changes as stated in previous comment but to snap up the flavor more, I added 1 cup of no salt tomato juice and 1 qt each of no salt chicken broth and beef broth. I also increased the mushrooms to 2 cups and added an extra stalk of celery. It really enhanced the flavor. Dietitian comment: The added tomato juice and vegetables contribute more potassium. These changes are not recommended for people on a lower potassium diet.

Wow this sounds great. I cannot wait to try it. I have have been wanting beef stew for days but did not know I could eat it. I have all the ingredient! Will make it tonight! I will soak the pearl barly over night and pour off the water, add three minced cloves of fresh garlic,double the onion and add the chipolette Mrs.Dash to kick it up a knotch with diced jalepena , no salt but the juice of two fresh small lemons. Thx so much Happy St Patty's Month!!!

I did not use salt but I did increase the Mrs.Dash and put in more celery for added flavor. I got beef cubes at a local meat market and cut them even smaller than called for. This made a little more in prep time but the tenderness paid off.I doubled the recipe and put the rest in the freezer.

This is an awesome recipe. My husband is in complete kidney failure and it is hard to cook for him. This reicipe makes it a little easier. We both loved it.

My family loves this recipe. I found it makes a difference to use fresh garlic and all of the pepper called for in the recipe. It is great with venison as well.

Made this recipe for st Patty's Day and it was a BIG hit with pts. It did thicken nicely; you need to soak the pearl barley prior to cooking for this to occur. Some did say the recipe needs more salt, but those were the pts that typically eat more sodium than recommended. Delicious!
