Green Chili Stew

Here is a kidney-friendly recipe for Green Chili Stew. It features succulent pork, chili peppers and spices rolled into a flour tortilla topped with sour cream, lettuce and cilantro.

Portions: 6     Serving size: 3/4 cup stew, 1 tortilla

Ingredients

  • 1/2 cup all-purpose white flour
  • 1 tablespoon garlic powder
  • 1 teaspoon black pepper
  • 1 pound lean pork chops
  • 1 tablespoon olive oil
  • 8 ounces green chili peppers, canned
  • 1 garlic clove
  • 14 ounces low-sodium chicken broth
  • 6 flour tortillas, burrito size
  • 6 tablespoons sour cream
  • 3/4 cup iceberg lettuce
  • 1/4 cup cilantro 

Preparation

  1. In a large zip-top plastic bag combine flour, garlic powder and black pepper; mix well. 
  2. Cut pork into bite size cubes. Place pork in the bag and shake to coat well with flour mixture. 
  3. Heat olive oil in a large skillet and brown pork pieces.
  4. Drain chili peppers and dice. Mince garlic clove.
  5. Place browned pork, chili peppers, garlic and chicken broth into a slow cooker. Cook for 10 hours on low heat.
  6. Place 3/4 cup of stew on a tortilla and roll burrito style. 
  7. Shred lettuce and chop cilantro.Top each serving with 1 tablespoon sour cream, lettuce and cilantro.

Helpful hints

  • For a spicier dish add 1 tablespoon hot red chili powder or chili flakes into the slow cooker.
  • As an alternative to burrito style, serve stew in a bowl with tortilla, bread or low-salt crackers on the side.

This is incredibly delicious. I tweaked it just a little. In addition to finely minced white onion and de-seeded, finely minced cucumber, I added a couple of tablespoons of finely minced pickled jalapeno pepper and carrot combination. Of course, I omitted the salt. Add about 1/2 teaspoon of Mrs. Dash table blend, sprinkle with paprika, refrigerate, and voila! This is a veggie spread that could grace any table.

This is really good. Cream and works good in a lot of different ways. I put the minced cucumber in a fine mesh strain and let some of the juice drip out and it is even creamier.

This sounds really good. I make something very similar to this. I slice the cucumber after peeling long way, and scrape out those pesky seeds. Then I slice it as thin as humanly possible. Then I squeeze the slices in a clean dish towel getting as much liquid out of them as I can. I omit the salt, in my humble opinion, it isn't needed, and add 1/4 tsp. of garlic powder instead. I also omit the mayo and use sour cream in it's place. Gives the whole dish a bit of zip. I've never used food coloring, but will the next time I make this. A pale green color sounds attractive!
