Hearty Chicken Soup

Kristy, a DaVita dietitian from Michigan, shares a Hearty Chicken Soup recipe that is frequently prepared by her dialysis center’s social worker, Linda. This soup is delicious, healthy and hearty enough to make an entire meal. It’s an easy kidney-friendly recipe to make that features the savory flavors frequently found in Midwest cuisine.

Portions: 8     Serving size: 1-1/2 cups

Ingredients

  • 1 pound boneless, skinless chicken breasts, uncooked 
  • 1-1/2 cups onion
  • 1-1/2 cups celery
  • 1 tablespoon olive oil
  • 1 cup fresh carrots
  • 1 cup fresh green beans
  • 3 tablespoons all-purpose white flour
  • 1 teaspoon dried oregano
  • 2 teaspoons dried basil
  • 1/4 teaspoon nutmeg
  • 1 teaspoon thyme
  • 32 ounces reduced-sodium chicken broth
  • 1/2 cup liquid nondairy creamer
  • 2 cups frozen green peas
  • 1/4 teaspoon black pepper 

Preparation

  1. Dice onion and celery. Peel and slice carrots.Cut green beans into 2-inch pieces.
  2. In a large skillet over medium heat, lightly brown chicken for 5 to 6 minutes. Remove from heat.
  3. In a separate skillet, heat olive oil over medium heat and sauté onion and celery for 5 minutes.
  4. Add chicken pieces, carrots, green beans, flour, oregano, basil, nutmeg and thyme. Mix well and cook for 3 minutes.
  5. Transfer ingredients to a 4-quart pan. Add broth and nondairy creamer; bring to a boil.
  6. Stir peas into soup and cook for 5 minutes.
  7. Add pepper to taste before serving.

Helpful hints

  • Reduced-sodium broth usually contains between 480 mg to 600 mg sodium per cup.
  • One medium onion yields 1/2-cup diced.
  • Count one serving as 4 ounces liquid, if you are limiting fluids.
  • Rice milk or almond milk can be used instead of nondairy creamer. Compare labels and look for the lowest potassium and phosphorus content.

In my local grocery store I noticed a package of HerbOx sodium free Granulated Chicken Bouillon. It has no sodium but I cannot tell about the potassium. I did not like that it was the 2nd item listed. Can you gauge from the info on the label? Here is what it says.... Nutrition Facts: Serving Size: 1 tsp Servings per Container: 26 Calories: 10 Total Fat: 0g Trans Fat: 0g Sodium: 0mg Total Carbohydrate: 2g Sugars: 1g Protein: 0g Ingredients: Sugar, Potassium chloride, onion powder , maltodextrin, monoammonium glutamate, Gerlatin, dextrose, chicken fat, turmeric color, dehydrated parsley, flavoring, disodium inosinate and disodium guanylate, slicon dioxide. I appreciate any help you can give....Dietitian content: If yo9u are on a low potassium diet, stay away from this product. one serving (4 grams or one individual packet) contains 451 mg potassium, much too high for a low potassium diet.

The only Frozen Green Peas I can find all include Salt on the ingredients list...can't find any without...and FRESH is NOT an option where I live..does this recipe take into account for that salt? I'm on Low sodium restrictions...would LOVE to make some soup though...in this cold winter. Maybe I could double up the green beans and add some mushrooms instead? Moderator response: No, the analysis includes unsalted peas.Substituting the green beans is a great idea!

I found Kitchen Basics chicken stock. It has NO sodium added, 150 mg sodium, no MSG, 13% phosphorus and 200 mg potassium. Moderator comment: Thanks for sharing the nutrition information! Many chicken broths are high in phosphorus due to phosphate additives used in the chicken. Compare other varieties of low and reduced sodium broth and buy the ones lowest in sodium, potassium and phosphorus.
