Spicy Green Bean Salad

Portions:  6  

Serving size:  1/2 cup

Ingredients

  • 1 pound green beans, fresh or frozen
  • 1/4 teaspoon salt
  • 2 tablespoons onion, finely chopped
  • 1 ripe red Serrano chile, seeded and sliced
  • 1/4 cup fresh cilantro, chopped
  • 1 teaspoon dried oregano
  • 3 tablespoons fresh lime juice
  • 2 tablespoons olive oil
  • 2 large hard cook egg whites, for garnish

Preparation

  1. Steam the green beans to desired doneness (5 to 10 minutes). Rinse with water to cool.
  2. Toss green beans with all remaining ingredients except egg whites.
  3. Serve chilled or at room temperature. Sprinkle egg whites on top shortly before serving.
