Cauliflower with Garlic Sauce

Recipe modified from the Centers for Disease Control and Prevention Fruit and Vegetable Guide and submitted by DaVita renal dietitian Diana from New Mexico.

Portions: 8

Serving size: 1/2 cup


  • 4 cups cauliflower florets
  • 2 garlic cloves
  • 1 tablespoon olive oil
  • 4 teaspoons honey
  • 3 tablespoons apple cider vinegar
  • 1 tablespoon fresh parsley


    1. In a large saucepan with steamer rack, steam cauliflower over boiling water 8 to 10 minutes or until crisp-tender (cover with lid while steaming).
    2. In a small saucepan, cook minced garlic in olive oil for 30 seconds then remove pan from heat.
    3. Stir in honey, apple cider vinegar and chopped parsley. Return saucepan to heat until sauce is heated.
    4. Transfer steamed cauliflower to a serving dish.
    5. Pour sauce over hot cauliflower and toss to coat.

I am not a fan of honey. Is there anything else that could be used with the same result? Dietitian comment: Yes you could use white or brown sugar or a sugar substitute such as stevia or other low calorie sugar substitutes.

all ingredients are good but I am unable to understand how 4 teaspoon honey will not increase sugar limit.? Dietitian comment: The honey contributes less than 3 grams carbohydrate to each portion. Since one serving has only 6 grams carbohydrate it is easy to plan into a carb-controlled meal.

This is a wonderful dish but i only need one serving and didnt want to put 7 servings in the refrigerator,and it is really not good after freezing. I hate having to sit and figure out how much of what to use for just one serving, I wonder can they not change the serving, not everyone needs so much. I wonder if there is a way to make suggestions ? But loved the recipe.

I think I'd add the honey after cooking, so it's not heated too much. Honey should never be cooked at too high a temp, so it retains its health benefits. Otherwise, nice recipe!
