Eggplant Casserole

Portions: 4     Serving size: 3/4 cup

Ingredients

  • 3 cups eggplant
  • 3 large eggs
  • 1/2 cup liquid nondairy creamer
  • 1/8 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/4 teaspoon sage
  • 1/2 cup breadcrumbs
  • 1 tablespoon margarine

Preparation

    1. Preheat oven to 350° F.
    2. Peel and cut up eggplant. Place eggplant pieces in a pan, cover with water and boil until tender. Drain and mash.
    3. Combine beaten eggs, nondairy creamer, salt, pepper and sage with mashed eggplant. Place in a greased casserole dish.
    4. Mix melted margarine with breadcrumbs. 
    5. Top casserole with breadcrumbs and bake 20 minutes or until top begin to brown.

My husband is on dialysis, I have to watch a lot onhim. He loves to eat. Lol. This recipe looks great for normal people with no problem. I'll have 2 use egg whites, lesser salt, rice milk, I'd have to [INVALID]uate which is btr~ flat bread, sugar free bread, unsalted crackers or unsalted panko. Instead of milk I found some organic chicken broth 80 grams salt ~ lesser than any I found & btr. I might use that instead.

Yummy! I used coconut milk, omitted salt and pepper and used Trader Joe's 21 Spice Salute instead. I also sprinkled a little bit of shredded swiss cheese on top.

What is a substitute for non-dairy creamer? Is almond milk OK. Dietitian comment: Try to find an almond milk or rice milk without phosphate additives. Most almond milks contain calcium phosphate so it may be difficult to find. Rice Dream brand original rice milk does not contain phosphates and is low in potassium.

Are there any recipes with No Sodium No Potassium and No Phosphorus?? Seems to me even these recipes are high in all 3. Dietitian comment: Most kidney diet prescriptions include nutrient ranges such as 1500 to 2000 mg sodium, 800 to 1000 mg phosphorus, and 2000 to 4000 mg potassium. Values are adjusted to individual needs. You will not find recipes with zero values for these nutrients. Contact your doctor or dietitian for individualized recommendations.

This sounds really good. Is it possible to use rice milk instead of non dairy creamer. Dietitian comment: Yes the rice milk should work for this recipe.

My dad is suppose to limit phos and pot this recipe seem to have a lot to me? Is this really recommended for dialysis pt? Dietitian comment: The amounts in this recipe are very reasonable considering the nutritional value of the dish. If you want to reduce the phosphorus further, substitute liquid egg substitute for the eggs.

I made this for my brother - he loves eggplant. I added sliced mushrooms, fresh sage and a small amount of grated Romano cheese to the breadcrumbs. It was very satisfying and I think I can kick it up a notch next time, I'm going to add onions, oregano or thyme. Thank you for taking the worry out of cooking for my brother. Everyone enjoyed the DaVita recipes over Christmas holiday this year and no mention of my brother's "special" diet!"
