Glazed Carrots

Naturally sweet carrots can be dressed up with a little ginger, apple juice and a few other ingredients to create this tasty kidney-friendly recipe for Glazed Carrots. This quick, easy recipe dresses up an already delicious vegetable making it a special treat.

Portions: 4     Serving size: 1/2 cup per serving

Ingredients

  • 2 cups carrots
  • 1/4 cup boiling water
  • 1 tablespoon sugar
  • 1 teaspoon cornstarch
  • 1/8 teaspoon salt
  • 1/4 teaspoon ground ginger
  • 1/4 cup apple juice
  • 2 tablespoons margarine 

Preparation

  1. Slice carrots into 1-inch thick slices. Place carrots and water in a pot, cover and cook until slightly tender.
  2. Mix together sugar, cornstarch, salt, ginger, apple juice and melted margarine. Pour mixture over carrots and water in the pot.
  3. Cook, stirring occasionally, for 10 minutes or until mixture thickens.

Helpful hints

  • Fresh carrots are best but you can substitute frozen carrots.

Have made this recipe many times. It's a favorite in our house. Usually use baby carrots. Just cook them a little longer.
