Gourmet Green Beans

Savory onion, red pepper, dill weed, parsley and black pepper perk up green beans in this kidney-friendly recipe for Gourmet Green Beans. Green beans are low in potassium, making them a healthy side item on the dialysis diet. This delicious recipe can be enjoyed by the family, too.

Portions: 4     Serving size: 3/4 cup


  • 10 ounces frozen green beans
  • 4 teaspoons margarine
  • 1/4 cup onion
  • 1/2 cup red bell pepper
  • 1 teaspoon dried dill weed
  • 1 teaspoon dried parsley
  • 1/4 teaspoon black pepper 


  1. Cook green beans in boiling water until tender. Drain. 
  2. Chop onion and bell pepper.
  3. Place a skillet on medium heat, add margarine and sauté onion, red pepper, dill and parsley until soft. 
  4. Add green beans to skillet and heat until beans are hot. 
  5. Sprinkle with black pepper and serve.

These were very good! To give it more of a spicy taste We added Crushed Red Pepper 1/2 Teaspoon.
